Weetabix Loaf

Ingredients

3 Weetabix, crushed
8 oz (225g) soft brown sugar
6 oz (175g) sultanas
1/2 pt (300ml) milk
1/4 tsp ground ginger
1/4 tsp ground cloves
1/2 tsp salt
7 oz (200g) S. R. flour
2 eggs, well beaten

Method

1. Soak all ingredients (except flour and eggs) overnight.
2. Add flour and eggs and beat well.
3. Spoon mixture into a greased and base-lined 2 lb loaf tin.
4. Bake in a pre-heated oven 190°C/375°F/Gas 5 for 1 – 1½ hours.
