Walnut Fruit Fingers


6 oz (175g) butter
6 oz (175g) brown sugar
4 oz (100g) S. R. flour
2 oz (50g) walnuts, chopped
4 oz (100g) sultanas or raisins
2 oz (50g) medium oatmeal
1 egg
1 tsp vanilla essence
chocolate glacé icing


1. Melt butter, cooking until slightly syrupy, and mix in all other ingredients (except icing!)
2. Press into a greased 11″ x 7″ Swiss roll tin.
3. Bake in a pre-heated oven 180°C/350°F/Gas 4 for approx 20 minutes.
4. Decorate with icing while hot.
5. Leave to cool in tin and cut into fingers.
