Vegetarian Roast

Pre-heat oven to: 220°C/425°F/Gas 7
Time in oven: 10-15 minutes
Serves: 4


4 red peppers
8 tomatoes, halved or sliced
salt and pepper
basil, optional
8 oz/225g grated cheese
olive oil


1. Cut peppers in half lengthwise, removing seeds and pith.
2. Put 2 tomato halves or slices in each half pepper and sprinkle with salt, pepper and basil.
3. Spread layer of cheese over tomatoes.
4. Place in oiled roasting dish, drizzle a little olive oil on each and place in oven.
5. Serve with garlic bread.
