Vanilla Cream Terrine

Serves 6


15 fl oz/425ml whipping cream
1 sachet gelatine powder
3 oz/75g caster sugar
2 tsp vanilla extract
15 fl oz/425ml natural yoghurt
18 oz/500g soft red berries

18 oz/500g soft red berries
3 oz/75g caster sugar


1. Place 3 tblsp cream in a small bowl and add gelatine.
2. Leave for 5-10 minutes.
3. Put remaining cream and sugar in a saucepan and heat gently until sugar dissolves.
4. Add gelatine mixture and heat until dissolved. Do not allow to boil.
5. In a bowl, stir vanilla and yoghurt together, pour on cream mixture through a sieve and mix thoroughly.
6. Pour in to a 10″ x 3″/25.5cm x 7.5cm plastic box and chill.
7. Turn out on to a serving tray, decorate with mixed red berries and serve with a coulis.

1. Mix together and soak for 30 minutes.
2. Sieve through a fine mesh strainer and serve.
Note: Other fruits can be used.
