Uncle George’s Satay Chicken


8 chicken fillets
1 onion, chopped
1 garlic clove, chopped
1 tblsp oil
1/2 cup chicken stock
1/4 cup peanut butter
1/4 cup honey
2 tsp grainy mustard
1 tsp curry powder
dash of Tabasco


1. Cook onion and garlic in a little oil for a few minutes.
2. Remove from pan and set aside.
3. Brown chicken in pan, add stock, onion and garlic mixture.
4. Add rest of ingredients and cook slowly until dish is thick and saucy with a good aroma.
