Turkey Steaks in Marsala

Pre-heat oven to: 180°C/350°F/Gas 4
Time in oven: 10-15 minutes in total
Serves: 4


4 turkey breasts
salt and pepper
flour for coating
3 oz/75g butter
1 tblsp olive oil4 oz/110g sliced mushrooms, thinly sliced
1 tblsp lemon juice
2 tblsp Parmesan cheese, grated
6 tblsp Marsala wine
2 tblsp chicken stock


1. Roll meat thinly. Coat in seasoned flour.
2. Melt 11/2 oz/35g butter and oil and fry turkey until golden brown.
3. Put turkey in flat dish in oven.
4. Add 1 oz/25g butter to pan and fry mushrooms until brown. Sprinkle with lemon juice.
5. Using slotted spoon, lift out and place on turkey.
6. Sprinkle Parmesan cheese on top and place in oven for a few minutes until cheese melts.
7. Pour wine into pan and reduce by half. Add stock and 1/2 oz/10g butter and pour over turkey.
8. Return to oven for a few minutes until sauce bubbles.
