Tuna Chowder

Serves: 2-4


1 oz/25g butter
1 oz/25g plain flour
½ -2 tsp curry powder
½ pt/300ml warm milk
½ pt/300ml chicken stock
11 ½ oz/326g can sweetcorn, drained
8 oz/225g can tuna, flaked
parsley, chopped
1-2 cream crackers, optional


1. Melt butter in pan and add flour and curry powder.
2. Cook for 1-2 minutes. Add warm milk, stirring continuously.
3. Add stock, sweetcorn and tuna.
4. Bring to the boil, simmer for 5 minutes and add parsley.
5. Pour into individual soup bowls and sprinkle crushed crackers on top.
