Tower of Pork and White Fruit Pudding

Serves: 1


1 tblsp olive oil
6 oz/175g pork medallions
4 oz/110g white fruit pudding
1/2 apple
2 oz/50g butter

1/4 pt/150ml double cream
2 fl oz/50ml Calvados
1/4 oz/10g fresh chives, chopped
salt and pepper
1/2 oz/10g sugar
1/2 lime
1/2 oz/10g watercress


1. Heat olive oil and pan-fry medallions of pork for 4-6 minutes.
2. Grill white fruit pudding for 2-3 minutes.
3. Dice half apple and pan-fry with butter until soft.
4. Add cream, Calvados and chives and reduce by half.
5. Add seasoning and sugar to your own taste.
6. Build tower of pork and fruit pudding in centre of plate.
7. Pour over Calvados sauce and serve with lime and watercress.
