Tomato and Mascarpone Pasta
2 garlic cloves, crushed
1 tblsp tomato purée
½ tsp sugar
1 tblsp fresh basil, chopped
14 oz/400g can tomatoes
1 tsp balsamic vinegar
3 tblsp Mascarpone cheese
12 oz/350g pasta
1. Cook pasta according to packet instructions.
2. Sauté onion and garlic for few minutes.
3. Add other ingredients except cheese and pasta. Cook over medium heat for approximately 10 minutes.
4. Blend if desired. Stir in cheese.
5. Add to drained pasta and serve.
