Thatched Cod


4 pieces cod (or haddock)
1 1/2 oz (40g) butter
4 oz (100g) onion, chopped
2 oz (50g) white breadcrumbs
2 oz (50g) cheese, grated
3 tomatoes, skinned and chopped
1 tsp parsley, chopped
1 lemon, grated rind and juice
salt and pepper


1. Melt ½ oz butter and use a little to grease the base of an ovenproof dish.
2. Arrange fillets in a single layer and brush with remaining melted butter.
3. Fry onion in 1 oz butter and add breadcrumbs, cheese, tomatoes, parsley, lemon rind and juice and seasoning.
4. Spoon mixture over fillets.
5. Cook in a pre-heated oven 190°C/375°F/Gas 5 for 30-40 minutes.
