Thai Chicken

Ingredients

8 chicken breasts or quarters
1 lb (450g) onions, chopped
2 large garlic cloves, chopped
2 x 14 oz (400g) tins tomatoes
4 oz (100g) crunchy peanut butter
1/2 oz (12g) flour
1 tsp brown sugar
1 tsp ground cardamom
1 1/2 tsp turmeric
2 tsp cumin
1/4 – 1/2 tsp chilli powder
4 tblsp vinegar
5 tblsp soy sauce

Method

1. Arrange chicken in casserole dish.
2. Fry onions and garlic, blend in tomatoes and peanut butter.
3. Add rest of ingredients to pan and mix together.
4. Pour over chicken and cover.
5. Bake in pre-heated oven 180°C/350°F/Gas 4 for 2 hours, stirring occasionally.
6. Serve with rice.
