Stuffed Sole


8 small or 6 medium fillets of sole

1/2 cup breadcrumbs
4 oz (100g) cheese, grated
2 oz (50g) margarine
1 small onion, grated


1. Mix all filling ingredients together.
2. Place 4 (or 3) fillets in buttered casserole, cover with filling, lay remaining fillets on top and dot with butter.
3. Cook in a pre-heated oven 160°C/325°F/Gas 3 for 30-40 minutes.
