Stuffed Salmon

Pre-heat oven to: 180°C/350°F/Gas 4
Time in oven: 30-45 minutes
Serves: 10-12


6-7 lb/2.7-3.15 kg salmon

2 oz/50g white breadcrumbs
4 oz/110g almonds, unblanched
2 oz/50g parsley
1 tblsp thyme or tarragon

3 tblsp lemon zest
2 tblsp lemon juice
4 oz/110g salt butter
salt, pepper and cayenne pepper


1. Combine first 3 stuffing ingredients.
2. Blend in processor and add remaining ingredients.
3. Season to taste.

1. Fillet fish and pat dry.
2. Lay one side of fillet on a long length of clingfilm.
3. Place stuffing along length of fish.
4. Lay second fillet on top and wrap tightly with clingfilm.
5. Place fish on length of foil and secure loosely.
6. Lay in large roast tin and bake.
7. Serve with potatoes, lemon, butter and mixed salad.
