Streusel Squares


6 oz (175g) caster sugar
3 oz (75g) margarine
1 egg, beaten
a pinch of salt
6 oz (175g) S. R. flour
1/4 pt (150ml) milk

1 oz (25g) margarine, melted
3 oz (75g) soft brown sugar
2 oz (50g) walnuts, chopped
1 oz (25g) S. R. flour
1 tsp cinnamon


1. Cream sugar and margarine until fluffy, add egg and beat well.
2. Sieve salt and flour into creamed mixture with the milk and mix.
3. To make topping, mix margarine and sugar, add walnuts, flour and cinnamon.
4. Spoon half of the cake mixture into a greased 11″ x 7″ tin and sprinkle with half the topping.
5. Cover with remaining cake mix and sprinkle on rest of topping.
6. Bake in a pre-heated oven 180°C/350°F/Gas 4 for 35-40 minutes.
7. Cut into squares when cold.
