Steak with Pepper Sauce

Pre-heat oven to: 150°C/300°F/Gas 2
Serves: 4

Ingredients

4 sirloin steaks
2 tsp black peppercorns, slightly crushed
2 tsp butter
6 fl oz/170ml beef stock
3 tsp brandy
6 fl oz/170ml double cream
1 tsp green peppercorns, slightly crushed

Method

1. Rub steaks with crushed black peppercorns.
2. Heat butter in heavy based frying pan over medium heat.
3. Add steaks and fry until browned on both sides, 2 minutes per side for medium-rare and 3 minutes for medium.
4. Remove steaks and keep warm in oven.
5. Add stock and brandy to pan allowing liquid to reduce for 3-4 minutes.
6. Add cream and green peppercorns.
7. Increase heat slightly and cook, stirring until sauce thickens.
8. Remove steaks from oven, pour sauce over and serve.
