Spicy Sponge


5 oz (150g) caster sugar
5 oz (150g) margarine
3 eggs
1 tblsp syrup
5 oz (150g) S. R. flour
1 tsp mixed spice
1/2 tsp cinnamon
1/2 tsp ginger


1. Cream sugar and margarine, add eggs, one at a time.
2. Add a little flour if curdling, beat in syrup.
3. Sieve dry ingredients and gently fold in.
4. Put mixture into 2 greased and floured 7″ tins and bake in a pre-heated oven 180°C/350°F/Gas 4 for 20-30 minutes.
5. Cool and sandwich together with desired filling.
