Spicy Duck Breast with Orange Glaze

Pre-heat oven to: 180°C/350°F/Gas 4
Time in oven: 15 minutes
Serves: 4

Ingredients

4 duck breasts
1 tblsp coarse sea salt
2 tsp freshly ground black pepper
3 tsp ground cinnamon
olive oil

Glaze:
zest of 1 orange
¼ pt/150ml fresh orange juice
2 tblsp runny honey

Method

1. Mix sea salt, pepper and cinnamon together, add a little olive oil and rub all over duck breasts.
2. Over a high heat, in a frying pan, sear duck breasts, skin side down only, until skin is golden and crispy. Transfer to a roasting dish.
3. Place ingredients for glaze in saucepan. Stir off the heat.
4. Brush a little of the glaze over the duck, turn duck skin side up and roast, brushing skin with more glaze half way through.
5. Towards end of cooking time, boil remaining glaze until it reduces and becomes syrupy.
6. Leave duck to rest for 5 minutes after removing from oven, pour glaze over before serving.
7. Serve with sweet potato mash and green salad.
