Soused Herring or Mackerel
6 herring or mackerel
salt and pepper
2 bay leaves
1/8 pt (75ml) vinegar
1/4 pt (150ml) water
1. Wash and trim fish. (If herring are used they must be boned).
2. Roll up and place in pie dish.
3. Add seasoning, cloves and bay leaves and cover with vinegar and water.
4. Cook in a pre-heated oven 190°C/375°F/Gas 5 for 45 minutes.
