Shortbread (2)


1 cup S. R. flour
2 cups plain flour
1 cup caster sugar
1 cup cornflour
8 oz (225g) butter


1. Mix all dry ingredients together in a bowl.
2. Melt butter slowly, pour into dry mixture and knead lightly.
3. Press mixture into 2 greased 7″ sandwich tins.
4. Bake in a pre-heated oven 160°C/325°F/Gas 3 for 1 hour.
5. Cut into wedges while hot and sprinkle with caster sugar.
