Shortbread (1)


8 oz (225g) butter
3 oz (75g) caster sugar
3 oz (75g) ground rice or Farola
3 oz (75g) cornflour
6 oz (175g) plain flour


1. Melt butter in pan and gradually add dry ingredients.
2. Press mixture into a Swiss roll tin.
3. Bake in a pre-heated oven 190°C/375°F/Gas 5 for 25 minutes.
4. Cut into fingers while hot and sprinkle with caster sugar.
