Saucy Pasta Spirals


4 rashers streaky bacon, chopped
1 tblsp oil
1 large onion, finely chopped
1 clove garlic, crushed
1 small green or red pepper, finely chopped
1 lb (450g) lean minced beef
1 large carrot, finely sliced
1 tsp dried thyme
1 tblsp tomato purée
4 tblsp red wine or beef stock
12 oz (350g) pasta spirals or shells
salt and pepper
1 spring onion for garnish, finely chopped


1. Fry bacon in its own fat in a heavy based pan until lightly coloured.
2. Add oil (if necessary), onion, garlic and pepper and cook until soft.
3. Add mince and cook until browned.
4. Add carrot, thyme, purée and wine or stock and cook for 25 minutes.
5. Meanwhile, cook pasta in a large pan of salted boiling water and drain.
6. Season the sauce and serve over the pasta.
7. Garnish with spring onion.
