Quick Christmas Cake

Pre-heat oven to: 150°C/300°F/Gas 2
Time in oven: 2.5 hours
Makes: 30 slices


8 oz/225g plain wholemeal flour
3 tsp baking powder
5 oz/150g soft margarine
5 oz/150g dark brown sugar
6 oz/175g mixed fruit
zest of 1 lemon and 1 orange
2 oz/50g walnuts
3 eggs
1 lb/450g mincemeat


1. Place all ingredients in mixing bowl and cream well together.
2. Spoon into a lined 8″/20cm diameter cake tin and bake in oven.
3. Remove carefully from tin and cool on wire rack.
Note: Can be eaten immediately, does not require time to mature.
