Quick Banoffi Pie

Ingredients

Base:
12 digestive biscuits
3 oz (75g) margarine, melted

Topping:
2 bananas, sliced
1/4 pt (150ml) double cream, whipped

Filling:
1 large tin condensed milk
2 oz (50g) margarine
2 tblsp syrup

Method

1. Base – Put biscuits into bowl, add melted margarine and mix.
2. Press into a large flan dish and chill.
3. Filling – Put all ingredients into pan and melt slowly.
4. Bring to caramelising point, stirring constantly.
5. Pour over base and leave to cool completely.
6. Topping – Lay bananas on top of filling and cover with cream.
