Queen Cakes


4 oz (100g) margarine
4 oz (100g) caster sugar
2 eggs
6 oz (175g) S. R. flour
1 tsp baking powder


1. Cream margarine and sugar and mix in one egg with some flour.
2. Add second egg, remainder of flour and baking powder and beat well.
3. Put spoonfuls of mixture into paper cake cases.
4. Bake in a pre-heated oven 200°C/400°F/Gas 6 for 10-15 minutes.
