Potato Scones


8 oz (225g) cooked potatoes
2 oz (50g) plain flour or oatmeal
pinch of salt


1. Mash potatoes very smoothly.
2. Put flour, salt and potatoes on a baking board.
3. Work in as much flour as potatoes will take up. (Less flour will be required if potatoes are very dry).
4. Roll out very thinly and cut into rounds.
5. Place on a hot girdle and prick all over with fork.
6. Cook for 2-3 minutes on either side.
7. Cool between a folded tea-towel.
