Pork Spare Ribs

Pre-heat oven to: 100°C/200°F/Gas 1/2
Time in oven: 1 hour
Serves: 2


16 spare ribs
4 fl oz/125ml vinegar
2 cloves garlic
1 small onion, chopped
7 fl oz/200ml tomato ketchup
2 heaped tsp whole-grain mustard
1 tblsp vinegar
1 tsp mixed spice
2 tblsp soy sauce
2 tblsp demerara sugar
1 tblsp honey


1. Place ribs in pan and cover with boiling water. Add vinegar, boil for 15 minutes and drain.
2. Mix all other ingredients together.
3. Add ribs, coat well and soak overnight.
4. Cook in oven-proof dish.
5. Serve with side salad and crusty bread.
Note: Serves 2 as a main course and 4 as a starter.
