“Popping Out” Apple Pie
Pre-heat oven to: 200°C/400°F/Gas 6
Time in oven: 1 hour
Serves: 12
Ingredients
1 large or 2 medium cooking apples
2-3 tblsp lemon juice
1 tsp vanilla essence
3 eggs
4 oz/110g sugar
pinch of salt
4 oz/110g plain flour
1 tsp baking powder
6 tblsp oil
2 oz/50g butter
icing sugar
Method
1. Peel, core and slice apples and sprinkle with lemon juice and vanilla essence.
2. In a mixing bowl beat together eggs, sugar and salt.
3. Gradually add flour and baking powder. Add oil quickly and mix thoroughly.
4. Pour batter into a greased 8″/20cm hinged baking tin and spread pieces of apple evenly on top.
5. Bake in middle of oven.
6. Pastry should be popping out between pieces of apple and be golden brown in colour.
7. Take out of oven, brush with melted butter and sprinkle with icing sugar.
8. Remove from tin when cold.
