Pineapple Cake


6 oz (175g) soft brown sugar
4 oz (100g) soft margarine
12 oz (350g) mixed dried fruit
4 oz (100g) cherries (optional)
small tin crushed pineapple, drained
8 oz (225g) flour
2 eggs, beaten


1. Put sugar, margarine, dried fruit, cherries and pineapple into a pan.
2. Allow the mixture to melt over a low heat, stirring until it boils.
3. Remove from heat and allow to cool.
4. Add flour and eggs and blend well.
5. Spoon mixture into a greased and lined 8″ cake tin.
6. Bake in a pre-heated oven 150°C/300°F/Gas 2 for 1 hour 40 minutes.
