Pan Fried Scallops

Ingredients

1 lb (450g) fresh scallops (3 or 4 per person)
1 egg, beaten
breadcrumbs
salt
garlic pepper
lettuce, shredded
lemon to garnish

Method

1. Dip fresh scallops in beaten egg then toss in breadcrumbs.
2. Fry scallops in hot melted butter.
3. Sprinkle with salt and garlic pepper.
4. Serve in large scallop shell on bed of lettuce and garnish with lemon wedges.
