Oven Baked Chicken


4 chicken portions, skinned
2 oz (50g) butter
2 ½ oz (60g) pkt. plain crisps
4 oz (100g) grated cheese
1 tblsp parsley
¼ tsp garlic powder
½ tsp dried tarragon
salt and pepper


1. Melt butter and brush half of it over chicken.
2. Crush crisps and mix with remaining ingredients, seasoning to taste.
3. Press this mixture around chicken portions and place them on a baking tray or in an ovenproof dish.
4. Sprinkle over the remaining butter.
5. Bake in pre-heated oven 180°C/350°F/Gas 4 for 45 minutes (or until chicken is tender and juices run clear).
6. Serve with a baked potato and sweetcorn or a side salad with crusty bread.
