Orange Cake


8 oz (225g) butter or margarine
½ pt (300ml) fresh orange juice
10 oz (275g) demerara sugar
2 eggs, beaten
14 oz (400g) wholemeal flour
2 tsp baking powder

6 tblsp icing sugar
3 tblsp orange juice


1. Melt margarine, add all other ingredients (except icing sugar and juice) and beat well.
2. Pour into a greased deep baking tray approx. 7″ x 10″.
3. Bake in a pre-heated oven 180°C/350°F/Gas 4 for 60-70 minutes.
4. Mix icing sugar and orange juice, pour over hot cake and cut into squares when cold.
