Onion Tart

Pre-heat oven to: 200°C/400°F/Gas 6
Time in oven: 35 minutes in total
Serves: 6-8

Ingredients

Pastry:
1 roll short crust pastry
2 oz/50g butter
1 tblsp olive oil
1 ½ lb/700g onions, sliced

Filling:
2 whole eggs
2 egg yolks
5 fl oz/150ml single cream
salt and pepper
nutmeg, freshly grated

Method

1. Roll out pastry, line a flan ring 8″/20cm and refrigerate for 20 minutes.
2. Melt butter in large frying pan. Add oil and onions and sauté slowly until soft, for about 30 minutes. Allow to cool.
3. Take pastry case out of fridge, line with round of greaseproof paper and baking beans or dry pasta.
4. Bake for 10 minutes, take from oven and remove paper and beans.
5. Return to oven for approximately 5 minutes, until golden.
6. Reduce oven temperature to 180°C/350°F/Gas 4.
7. Mix together eggs, yolks, cream and onions. Season to taste.
8. Pour into prepared flan case and sprinkle with nutmeg.
9. Bake for about 20 minutes, until golden brown.
