Oatmeal Soup


knob of butter
1 large onion, chopped
1 med carrot, chopped
1 med piece turnip, chopped
2 leeks, chopped
2 oz (50g) oatmeal
1 1/2 pts (900ml) stock
salt and pepper
1 pt (600ml) milk


1. Melt butter in pan, add vegetables and toss until clear, cover pan with lid and cook for 5 minutes.
2. Stir in oatmeal and cook further 5 minutes.
3. Add stock, turn down heat, simmer for 50 minutes.
4. Add seasoning and just before serving, add milk and reheat.
