Nut Roast


1 tblsp oil
2 onions, chopped
1 green pepper, chopped
3 oz (75g) breadcrumbs
3 oz (75g) Brazil nuts
3 oz (75g) hazelnuts
2 oz (50g) walnuts
1 garlic clove, chopped
1 tsp mixed herbs
1 tsp curry powder
8 oz (225g) tomatoes, chopped
salt and pepper
1 egg beaten


1. Fry onion and pepper in oil until soft.
2. Mix breadcrumbs, nuts, garlic, herbs and curry powder in bowl.
3. Stir in onion, pepper, tomatoes and seasoning.
4. Mix together and bind with beaten egg.
5. Put in a greased 2 lb loaf tin.
6. Bake in a pre-heated oven 220°C/425°F/Gas 7 for 30-40 minutes.
7. Serve with a green salad, rice, etc.
