Nut Cake


2 oz (50g) margarine
4 oz (100g) dark brown sugar
1 large egg
2 oz (50g) chopped walnuts
3 oz (75g) S. R. flour
4 oz (100g) sultanas


1. Melt margarine and sugar in pan – DO NOT BOIL.
2. Remove pan from heat, add egg and half of the nuts.
3. Sift in the flour and add fruit.
4. Spoon mixture into a greased 7″ square tin and sprinkle top with remaining nuts before putting into oven.
5. Bake in a pre-heated oven 180°C/350°F/Gas 4 for 30 minutes.
