New Zealand Sultana Cake

Pre-heat oven to: 160°C/325°F/Gas 3
Time in oven: 1 hour
Serves: 20


1 lb/450g sultanas
8 oz/225g butter
8 oz/225g sugar
3 eggs
12 oz/350g plain flour
1 tsp baking powder
1 tsp lemon essence


1. Cover sultanas with water and boil for 15 minutes. Drain.
2. Melt butter and add sugar mixed with eggs.
3. Sift in flour and baking powder.
4. Mix in essence.
5. Bake in a greased and lined 8″/20cm round cake tin.
6. When cooked, remove from tin and place on cooling rack.
