“Never Fail” Cheesecake

Serves: 6


4 oz/110g digestive biscuits
2 oz/50g margarine, melted

1 packet orange jelly, or any flavour
¼ pt/150ml double cream
7 oz/200g Philadelphia light cheese
4 oz/110g icing sugar, sifted
½ tsp vanilla essence
¼ pt/150ml soured cream
1 small can mandarin orange segments


1. Crush biscuits and mix with melted margarine.
2. Press into a greased 8″/20cm loose-based tin.
3. Mix jelly in 1/4 pt boiling water and leave to cool.
4. Lightly whip double cream.
5. In second bowl mix cheese, sugar and vanilla essence.
6. Add mixture to whipped double cream and mix well.
7. Mix in soured cream, add jelly and whip.
8. Pour on to biscuit base and leave to set in fridge overnight.
9. Top with mandarin oranges or appropriate fruit just before serving.
