Mushroom Rice Toss


2 tblsp butter
1 onion, chopped
4 rashers bacon, chopped
1 red pepper, chopped
1 clove garlic, crushed
9 oz (250g) mushrooms, sliced
4 cups cooked rice
salt and pepper
1/2 cup grated cheese
2 tblsp chopped parsley


1. Fry onions, bacon and pepper in butter in large pan until soft.
2. Add garlic and mushrooms and fry until mushrooms are tender.
3. Add rice and toss over a moderate heat.
4. Add cheese and seasoning, toss and top with parsley.
