Minty Melon Starter


1 ripe Ogen melon, halved and flesh scooped out in balls (or cut in 1/2″ cubes)
2 small oranges, peeled and segmented
grated rind and juice of 1 lime
1/2 oz (15g) blanched almonds, toasted
2 tblsp fresh mint, chopped
small lettuce, washed and shredded
few sprigs mint to garnish


1. Place melon and oranges in bowl.
2. Mix together lime juice, nuts and mint.
3. Pour over fruit and leave to stand for 30 minutes.
4. Divide into 4 and serve on bed of lettuce.
5. Garnish with mint.
