8 oz (225g) plain flour
4 oz (100g) margarine
3 egg whites
3 oz (75g) caster sugar
3 oz (75g) ground almonds
1. Knead pastry ingredients, roll out and use to line a 11″ x 7″ Swiss roll tin.
2. Spread jam over pastry and cover with mincemeat.
3. Whisk egg whites until stiff, fold in sugar and almonds, spread over mincemeat.
4. Bake in a pre-heated oven 180°C/350°F/Gas 4 for 35-45 minutes.
5. Dust with caster sugar and cut while hot.
