Mincemeat Cake


5 oz (150g) margarine
5 oz (150g) caster sugar
2 eggs, beaten
8 oz (225g) S. R. flour
1 lb (450g) jar of mincemeat


1. Put all ingredients in a bowl and beat for 1-2 minutes until blended.
2. Spoon mixture into a lined 8″ cake tin.
3. Bake in a pre-heated oven 160°C/325°F/Gas 3 for 13/4 hours.
