Meringue Surprise


1/2 pt (300ml) whipping cream
1/2 pt (300ml) thick natural yoghurt
6-8 meringues, broken
1/2 tblsp Cointreau or Grand Marnier (optional)
7 oz (200g) tin pineapple chunks, drained
7 oz (200ml) tin mandarin oranges, drained
8 walnut halves, chopped


1. Whip cream, fold in yoghurt, mix in all the other ingredients and serve immediately.

Note: Looks good served in balloon glasses with an extra half walnut on top.
