Maple Glazed Pork Tenderloin

Pre-heat oven to: 200°C/400°F/Gas 6
Time in oven: 35 minutes
Serves: 2


12 oz/350g pork tenderloin
salt and black pepper, freshly ground
1 tblsp vegetable oil
3 tblsp maple syrup
4 tsp Dijon mustard
2 tsp cider vinegar
2 tsp soy sauce
2 tblsp minced shallot
5 fl oz/150ml chicken stock


1. Lightly sprinkle pork with salt and pepper.
2. Heat oil in large frying pan over medium heat.
3. Add pork, brown on all sides and remove from pan.
4. In a bowl mix syrup, mustard, vinegar, soy sauce, shallot, salt and pepper.
5. Brush pork with extra maple syrup and place in oven-proof dish.
6. Add all other ingredients.
7. Place in oven and cook until tender.
