Mallow Fudge Squares

Makes 24 squares


4 oz/110g butter
11 oz/300g Galaxy chocolate
4 tblsp syrup
14 oz/400g digestive biscuits
2 oz/50g raisins
2 oz/50g chopped cherries
11 oz/300g white chocolate
7 oz/200g mini marshmallows
icing sugar


1. Melt butter and chocolate slowly over low heat.
2. Stir in syrup, biscuits, raisins and cherries.
3. Press firmly into a greased 7″ x 11″/18cmx28cm baking tray.
4. Melt chocolate and mix in marshmallows. Pour over base and leave in fridge to set.
5. Dust with icing sugar and cut into squares.
