Lemon Cake


4 oz (100g) soft margarine
6 oz (175g) caster sugar
6 oz (175g) S. R. flour
4 tblsp milk
2 large eggs
rind and juice of 1 lemon
3 tblsp icing sugar


1. Beat together the margarine, caster sugar, flour, milk, eggs and rind.
2. Spoon mixture into a greased and lined 2 lb loaf tin.
3. Bake in a pre-heated oven 180°C/350°F/Gas 4 for 40 minutes.
4. Dissolve icing sugar in lemon juice over a low heat, pour over cake while still warm and leave to cool in tin.
