Lemon Barbecued Meat Loaves (Microwaved)


8 oz (225g) mince
3 tblsp white breadcrumbs
1/2 small onion, chopped
1/2 tblsp lemon juice
salt and pepper
1/2 egg, beaten
2 thin slices lemon

2 oz (50g) soft dark brown sugar
pinch dry mustard
pinch all spice
pinch ground cloves
2 tblsp tomato sauce


1. Combine mince, breadcrumbs, onions, lemon juice and seasoning and bind with beaten egg.
2. Press half the mixture into a cup and turn out on to a shallow baking dish. Repeat with remaining mixture.
3. Place 2 loaves, uncovered, in microwave and cook on “Full Power” for 3 minutes.
4. Remove from microwave, place a slice of lemon on each loaf.
5. Mix sauce ingredients and use to coat each loaf.
6. Again microwave, uncovered, at “Full Power” for 4 minutes.
7. Allow 3 minutes standing time.
