Julie’s Banana Loaf

Pre-heat oven to: 350°F/180°C/Gas 4
Time in oven: 30 minutes
Makes: 20 slices


6 oz/175g caster sugar
4 oz/110g margarine
2 eggs, beaten
2 bananas, mashed
1 tsp bicarbonate of soda
2 tsp boiling milk
8 oz/225g S.R. flour
1 tsp baking powder


1. Cream sugar and margarine and stir in eggs and bananas.
2. Combine bicarbonate of soda and boiling milk and add to banana mix.
3. Sift flour and baking powder and fold into mixture until smooth.
4. Pour into two greased 1 lb/450g loaf tins and bake in oven until golden brown.
Note: Do not throw out over-ripe bananas – freeze, defrost and use in baking recipes.
