Iced Lemon Squares

Ingredients

8 oz (225g) margarine
8 oz (225g) white cooking chocolate
2 tblsp syrup
12 oz (350g) “Nice” biscuits, crushed
4 oz (100g) coconut
Icing:
icing sugar
juice and rind of 1 lemon
a little coconut

Method

1. Melt margarine, chocolate and syrup in a pan.
2. Add biscuits and coconut and mix well.
3. Press mixture into a Swiss roll tin.
4. Make glacé icing with icing sugar, lemon juice and colouring.
5. Cover mixture with icing and sprinkle with extra coconut.
6. Cut into squares when set.
