Herring with Tarragon
Pre-heat oven to: 150°C/300°F/Gas 2
Time in oven: 20-30 minutes
Serves: 4
Ingredients
4 herring, gutted and heads removed
salt and pepper
Stuffing:
1 orange
4 spring onions, finely chopped
2 oz/50g fresh wholemeal breadcrumbs
1 tblsp fresh tarragon, chopped
salt and pepper
Garnish:
2 oranges, sliced thickly
1 tblsp light brown sugar
1 tblsp olive oil
fresh tarragon sprig
Method
Stuffing
1. Grate half orange rind. Chop up orange – use processor, if available.
2. Combine orange mixture with spring onions, breadcrumbs and tarragon in bowl.
3. Season with salt and pepper.
Fish
1. Fill herring cavities with stuffing.
2. Place fish on lightly-oiled foil, wrap round fish and bake.
3. Flesh should be white and firm to touch when cooked.
4. Place sliced oranges on a baking tray, sprinkle with sugar and drizzle with oil. Grill to
5. heat through.
6. Transfer fish to plates and garnish with grilled orange slices and fresh tarragon sprig.
7. Serve with salad.
