Fruit Squares


6 oz (175g) brown sugar
4 oz (100g) rolled oats
6 oz (175g) plain flour
½ tsp salt
6 oz (175g) butter
10 oz (275g) mincemeat
1 egg, beaten


1. Combine sugar, oats, flour and salt and mix well.
2. Rub in butter until mixture resembles coarse crumbs.
3. Spread half the mixture into an 11″ x 7″ Swiss roll tin and cover with mincemeat.
4. Spread remaining crumb mixture over fruit and gently brush with egg.
5. Bake in a pre-heated oven 200°C/400°F/Gas 6 for 20-25 minutes.
6. Cut into bars when cold.
